The taste of a Balsamic Vinegar is completely different from a regular one and older is it, sweeter it become. The younger balsamic are really tasty with salad, grilled meat and vegetables, fish and Parmigiano cheese and the older one are amazing with all those dishes but even with strawberries, oranges and icecream.
Is a condiment unique in the world, produced in limited quantities because historically linked to the provinces of Modena and Reggio Emilia. It seems, in fact, that the microclimate of these areas, with high temperature changes between hot summers and cold winters, would allow musts fermenting and aging well in the traditional way of production. This tradition is still alive in the family Leonardi who patiently and meticulously reproduced from year to year the production cycle of Balsamico di Modena, with gestures that are repeated for centuries and that they create an emotion always renewed. The brand that we choose for you has origins in the 1700 but only since the second half of the 1800 is dedicated solely to the production of high quality balsamic vinegar , using their own raw materials. In fact, the company covers 10 hectares of vineyards, mostly Trebbiano di Modena (white grape) and Lambrusco (red grapes).The company works in a closed cycle, or short chain because all stages of the production take place on the place of collection.
The must is left to mature in barrels batteries, composed of at least 9 wooden casks with decreasing size, from 180 to 10 liters, each of which made of different wood (oak, cherry, ash, chestnut, mulberry, juniper, acacia ... ) and only filled to 75% capacity. The barrels batteries are located in the attic because there the temperature range is more important (hot summer and cold winter). The barrels are open to allow the concentration of the liquid, by natural evaporation. The secrets of aging are often handed down from generation to generation and then do not follow a fixed rule, each manufacturer is proceeding according to their own experience gained over the years. The subsequent steps described take place during the aging period, which can last forever!

This is a young agricoltural company owned by a young guy who studied at the agrarian university of Florence and he realized the dream to open his farm in his available land (about 10 ha in total) located in a particular territory, to Calzalunga (or Casale Longo, as he was known in antiquity) in Suvereto, famous for wine, olive oil and of course truffles.Already Elisa Bonaparte, Napoleon's sister, chose this place to build his summer residence and to drink "the good wine of Casal Longo", as reported by the old texts of the time.
